Explain the cooking process of a tradicional dished served in your city/town.

The recipe I'm going to explain now is the traditional mid-morning snack in Monforte del Cid. This is the cake with Sardina is a recipe that is especially for lunch but many also use it for lunch or dinner. The preparation is:

Place warm water in a mixing bowl and dissolve the yeast in
the water, add some flour (just a piece). Add the rest of the flour
gradually and the salt, mixing it by hand. Continue mixing the dough
with your hands until it is not sticky. Let it rest it for 30 minutes, it is
necessary to let the dough rise.
Turn on the oven and set the temperature at 180º C. Place the dough
onto an oven tray and carefully stretch it out with your fingers,
making it fit the tray. Let it rest for 15 minutes.
Finally top with sliced tomatoes and sardine. Add some olive oil and
salt. In the preheated oven (same temperature) until crust is lightly
golden.
